Buffet vs Plated vs Family-Style Catering — Which Suits Your Event?
The service format shapes your budget, your timeline and the mood of the room more than the menu does. Here is how the three compare in Cape Town, with real numbers.
Buffet is the cheapest per head and the most flexible for big, mingling crowds, but it queues. Plated costs the most, because it needs more staff, and it buys pacing, speeches between courses and a sense of occasion. Family-style sits between the two: platters down a long table, no queue, and the warmest room of the three. For most catering in Cape Town under about 50 guests we steer people to plated or family-style. Past 50, buffets, canapé receptions and spit braais start to earn their place. from R795 pp per person.
The short answer

Family-style sits between the two: platters down a long table, no queue, and the warmest room of the three. The rest of this guide covers what each format costs in the Cape Town market, how many staff it needs, how it behaves on a windy terrace, and how to choose without second-guessing.

What each format costs per head in Cape Town
The market publishes clearer bands than most people expect. Okhantu's 2026 aggregate puts buffets at R350–550 per head and mid-range plated dinners at R450–750. Why Not?! Catering bands buffet and spit-braai formats at R280–400 per person and plated three-course at R450–650. Across the suppliers we track, buffets run roughly R300–600 and plated sit-down meals R500–900-plus, with premium wine-estate suppliers reaching R900–1,400 per head. Our catering cost per person guide cites every one of those figures line by line.
Family-style rarely gets its own line in competitor price lists, because most caterers quote it as a variant of plated or buffet. In practice it lands between them: the kitchen plates nothing individually, which saves labour at the pass, but the food still goes to the table, so you need more floor staff than a buffet does.
Our own published tiers show the shape clearly. The Vineyard tier is family-style with two mains from R795 per person. The Estate tier is a plated three-course with canapés from R995 per person. The Signature tier is a plated four-course with premium proteins from R1,195. For volume events, large-group catering for 50 guests and up starts from R550 per person.
Staffing: the line that changes the total
Headline per-head prices hide the biggest difference between the three formats, which is how many people it takes to serve them. The market's rule of thumb for plated service is one waiter per 20–25 guests, and published waiter rates sit around R120–160 an hour on four-hour minimums. Our own standard is one server per twelve guests, with dedicated buffet-runners and a floor captain once a buffet passes 100 guests.
Buffets need fewer hands at the table, but they need them at the line. Plan two service points per hundred guests, or accept that the first hour will be slow and the last table will eat cold food. Plated service needs the most hands at once, because every course leaves the kitchen together. Family-style needs steady floor staff to refill platters and clear between courses, though nobody has to carry twelve identical plates in formation.
A worked example, using our published from-rates: 80 guests at our 1:12 standard is seven servers. At the R195 hourly waiter rate on a four-hour minimum, that is R5,460 before overtime. That line is itemised on every quote, which is why two quotes with the same per-head figure can land thousands of Rand apart.
Pacing, speeches and the feel of the room
Plated is the format for structure. Courses land at once, the room goes quiet at the right moments, and speeches fit between the starter and the main. That is why milestone birthdays, client dinners and most formal wedding catering lean plated. The trade-off is less choice for guests on the night, so dietary needs have to be collected with the RSVPs and plated alternatives prepared in advance.
Family-style is the format for warmth. Passing a bowl of lamb down the table gets strangers talking faster than any icebreaker, and guests take what they like in the portions they want. It's the format we recommend most for villa weddings and long-table birthdays of 20 to 120 guests. The catch is table space: platters, glassware and centrepieces all compete for the same metre of linen, so the florist and the caterer need to talk.
Buffet is the format for movement. It suits conferences, launches and big family gatherings where people circulate rather than sit for three hours. It handles mixed dietary needs well, because each dish is labelled at the line and vegan, gluten-free and allergy-aware options sit in plain view. It also has the least ceremony, which is a feature at an office year-end and a bug at a wedding.
Cape Town conditions: wind, terraces and venues
The southeaster changes the maths. Chafing dishes and open buffet lines on an exposed terrace lose heat fast and collect sand on a beach-house deck, so outdoor buffets need a sheltered wall or a marquee side. Plated formality works well under a marquee on the lawn, and family-style works best on a sheltered terrace at golden hour, when the wind usually drops. On braai evenings we position the grills out of the wind and carve the mains family-style.
Villa kitchens matter too. A plated service for 40 needs pass space, plating surfaces and enough oven capacity to fire courses at once, which many holiday villas don't have. Family-style and buffet are more forgiving of a domestic kitchen, and we scout the space and plan backup power and induction for load-shedding in the consult. Wine-estate venues usually have proper kitchens, which makes plated easier there.

How to choose in five questions
Answer these in order and the format usually picks itself. If two formats survive, mix them: canapés and a family-style main, or a plated starter and a buffet dessert table, are both common in Cape Town.
Whichever you choose, ask for staffing, rentals such as chafers, platters and glassware, travel outside the city zones, and overtime past the booked service window as separate lines. That's how we quote, and it's the only way to compare two caterers fairly.
- How many guests? Under 50 favours plated or family-style; over 50 favours buffet, canapés or a spit braai.
- Are there speeches or a programme? Plated paces them best.
- Do you want guests seated or circulating? Seated suits plated or family-style; circulating suits buffet or canapés.
- Is it a domestic villa kitchen? Family-style and buffet forgive a small kitchen more than plated does.
- Is the setting exposed to the southeaster? Plan shelter for any buffet line.
